Riesling
Zo mooi compact, zo zeer aromatisch en heerlijk in de neus. Niets exotisch, geen Botrytis, gewoon Europees wit en geel fruit. Appel, peer, kweepeer... die zoveel volwassenheid tonen. Het geheel wordt onderstreept met kruiden en weidebloemen. In de mond heeft de wijn verrassend veel grip en ongelooflijke mineraliteit. Rijpe citrusvruchten, citroengras, Darjeeling-thee en een zekere kruidigheid die voortkomt uit deze zoute mineraliteit.
Jacobus rieslingwijn wordt als hele tros langzaam geperst gedurende 6 uur. Dus slechts lichte fenolen. Vervolgens spontaan gefermenteerd. De helft van staal en de helft van hout. Daarna blijft het op de droesem tot april volgend jaar.
Riesling
So beautifully dense, so highly aromatic and delicious in the nose. Nothing exotic, no Botrytis, just European white and yellow fruit. Apple, pear, quince... showing so much maturity. The whole thing is underlined with herbs and meadow flowers. In the mouth the wine has a surprising amount of grip and incredible minerality. Ripe citrus fruits, lemongrass, Darjeeling tea and a certain spiciness that comes from this salty minerality.
Jacobus riesling wine is slowly pressed as a whole bunch over 6 hours. So just slight phenolics. Then spontaneously fermented. Half in steel and half in wood. Afterwards it remains on the lees until next April.
